Butternut Squash Snickerdoodles

I, like over 600 other bloggers, got so excited when I heard the first tweets of what became a worldwide cookie swap among food bloggers of many countries. This project, so bravely taken on and beautifully executed by Lindsay of Love and Olive Oil and Julie of The Little Kitchen, brought smiles to so many faces over the last few weeks, including my own!
The premise was easy – make a cookie, pack up three one dozen boxes and ship them off to your matches – it was like a nationwide Secret Santa, cookie style. The anticipation nearly killed me! I watched everyone tweeting pictures and talking about the cookies they got, and I remained cookie-less….until all three of my boxes arrived Thursday morning at the same time. The timing was like kismet – it was my birthday!
I got these delicious Dark and White Chocolate cookies With Ginger from Carrie of Poet In The Pantry. My four year old can’t get enough of these cookies – he keeps asking for them! Glad to know that Carrie will have the recipe up on her blog for these today so I can make more for him when we run out!
The next box I opened was from Paula of bell’alimento.Everything about these were beautiful – the tin, the cookies - Zaletti – Italian polenta cookies w/dried fruit – not to mention yummy. Hubby seemed to favor these and has eaten more of them than any other.
The last box I opened was from Cassie of Bake Your Day. She enclosed a sweet note and said that her family calls the cookies she sent French Cookies. When I opened the box, I think my eyes got as wide as the amazing cookies themselves. Its funny that each member of my family gravitated toward one of the gifts, and this was the one I have munched on more!
My three recipients were not the people whom I got cookies from - I couldn’t even imagine having taking on the matching challenge that had to have gone on here – and I baked and shipped them each a box of Butternut Squash Snickerdoodles.
I had been seeing many recipes for Pumpkin Snickerdoodles, and had a giant Butternut Squash in the fridge, just begging to become festive.
These turned out as good as I had hoped they would – crunchy and sweet on the outside, pillowy soft on the inside, with a beautiful golden color from the squash. I was smart enough to have the foresight to double the batch so that my guys could have some, and they disappeared in no time flat.
I had a lot of fun baking these for my recipients, and hope that they enjoyed them. This was a really neat experience and I definitely have to thank Lindsay and Julie! Ingredients
- 3 3/4 c flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 c (2 sticks) butter, softened
- 1 c granulated sugar
- 1/2 c light brown sugar
- 3/4 c cooked and mashed butternut squash
- 1 egg
- 2 tsp. vanilla
- for the coating: 1/2 c granulated sugar
- 1 tbsp cinnamon
- 1/2 tsp allspice
Instructions
- cream sugars and butter
- add egg and squash, along with vanilla
- mix in dry ingredients
- chill for 1-4 hours
- roll into balls about the size of a ping pong ball (1 1/2-2 inches)
- and roll them in the cinnamon-sugar mixture before placing on a parchment lined cookie sheet
- using the bottom of a flat glass, dip the bottom in the cinnamon-sugar mixture and slightly flatten each cookie to about 1/2-3/4 thickness
- bake at 350 for 10-12 minutes

Snickerdoodles are my all time favorite cookie, especially my Grandma’s snickerdoodles:-) I love love the addition of a squash, looks pretty, and sounds delicious!! I definitely need to try this lovely recipe:-) Take care, Terra

I really wish I could have participated this year. Im glad I didn’t since our internet/cable outage for the last three weeks really screwed up blog/post/and study time for the house. But then I look at those cookies – and the awesome bloggers who sent them to you and Im all pouty faced. Your butternut squash snickerdoodles sound yummy and Im glad you did get all of those cookies – and on your birthday. I hope it was a great one

Your snickerdoodles look awesome! Could you tell it was the squash and not pumpkin?

The flavor was close to the same, but they actually made them more moist than the pumpkin. I think you could sneak some extra spices in these and make the butternut flavor really pop if you wanted to.
